I made my first ever roast chicken for last Sunday's dinner.

Pretty easy as it turns out. The cornbread/pearl onion stuffing was delicious, though I murdered the sauce. What should have been a delicious blend of fennel, garlic, white wine, and tomatoes was dominated by the burning pain of too many chili peppers. Live and learn. Oh, and my potatoes were crunchy. 1 hour in the oven at 400 felt like it ought to have been enough (after all, I've baked a potato in less) but they were definitely undercooked. But I'm being too hard on myself. Dinner was mighty tasty.
